- 1 Full rack of ribs
- 1 tbsp salt
- 1 tbsp pepper
- 3 tbsp cajun mix
- 1 white onion
- 1 Carrot
- 1 Celery stalk
- 2 Quarts La Fin du Monde
- ½ cup blended oil
La Fin du Monde BBQ sauce:
- 4 cups Ketchup
- 1 cup Molasses
- 1 cup white vinegar
- 1 cup lemon juice
- 1 tbsp chopped garlic
- 4 tbsp soy sauce
- 1 Hot spoon red pepper flakes
- 2 quart La Fin du Monde
- Salt & Pepper to taste
- Remainder of braising liquid from ribs
Cut ribs into single riblets, combine all dry spices and toss ribs.
In hot skillet sear ribs on both side.
After ribs are seared add chopped (large) carrots, onions and celery roast veggies 3 minutes, add 2 quarts La Fin du Monde let reduce by half.
Add veggies and reduced La Fin du Monde to baking with ribs.
Cover tightly and bake at 300 °F for 4 hours.
Remove ribs from braising liquid.
In medium sauce pour over medium heat.
Combine all ingredients.
Bring to aboil, reduce heat to a slow roll (soft boil) for approximately 2.5 hours.
