Ingredients

For the sauce:

  • 1/3 cup mayonnaise
  • 2 tbsp honey
  • 1 tsp smoked paprika
  • Salt and freshly ground pepper

For the patties:

  • 450 g lean ground beef
  • 1/4 cup of L’Infiltrée IPA
  • 1 tsp Montreal steak spice
  • 125 g blue cheese, crumbled (divided in half)
  • Salt and freshly ground pepper

For the caramelized onions:

  • 2 yellow onions, thinly sliced
  • 1/4 cup of L’Infiltrée IPA beer
  • Olive oil
  • 1/2 tsp fennel seeds
  • Salt and freshly ground pepper

To assemble:

  • 3 burger buns, buttered and grilled
  • Arugula
  • Tomato slices

Steps

  1. Make the sauce

    In a small bowl, mix the mayonnaise, honey, smoked paprika, salt and pepper. Refrigerate until ready to use.

     

  2. Prepare the patties

    In a large bowl, combine the ground beef with the Montreal steak spice, half the crumbled blue cheese, salt and pepper. Add L’Infiltrée IPA and mix well. Shape into 3 equal-sized patties. Keep refrigerated.

     

  3. Caramelize the onions 

    In a skillet over medium-low heat, warm a generous drizzle of olive oil. Add the onions, fennel seeds, salt and pepper. Cook for about 15 minutes, stirring frequently, until soft and golden. Pour in L’Infiltrée IPA, stir, and let reduce until almost dry (2 to 4 minutes). Keep warm.

     

  4. Cook the patties

    Preheat the BBQ to high and oil the grates. Grill the patties for about 4 to 5 minutes per side, or until desired doneness.

     

  5. Assemble the burgers

    Toast the buns to your liking. Spread a bit of sauce on the bottom bun, then layer with arugula, a beef patty, caramelized onions, the remaining blue cheese, and a tomato slice. Top with the bun and secure with a sandwich pick, if desired.
