If you’re looking for a unique fruit salad to wow your guests, we’ve got just the thing! We’re especially proud of our sauce with Blanche de Chambly Apricot beer. It evokes the taste of summer. Serve it with vanilla ice cream to make it even more fun.




For the Blanche de Chambly Apricot beer sauce

  • 60 ml (1/4 cup) dried apricots, sliced
  • 250 ml (1 cup) Blanche de Chambly Apricot beer
  • 60 ml (1/4 cup) white sugar

For the fruit salad

  • 1 small watermelon
  • 1 honeydew melon
  • 1 cantaloupe
  • 1 canary melon
  • Mint, for garnish
  • Vanilla ice cream (optional)


  1. In a bowl, put the dried apricots with the beer. Let stand 15 minutes. Drain the apricots and put the beer in a small saucepan.
  2. Combine all the ingredients for the Blanche de Chambly Apricot beer sauce. Heat until simmering to dissolve the sugar. Turn off the heat and let cool.
  3. Using a melon baller, form melon balls (or cut the melons into equal cubes). Arrange the melons on a serving platter. Mix with beer sauce. Garnish with mint and ice cream if you like!
