Beef stew with Maudite beer and pumpkin





Beef stew

• 1 kilo of pulled beef

• 2 kilos of crushed canned tomatoes

• 500 g of fresh pumpkin, diced

• 1 pinch of mustard seeds

• 1 pinch of coriander seeds

• 2 L of beef stock

• 682 ml of Maudite

• 250 g cipollini onions, chopped

• 8 garlic cloves

• ½ stick of celery, diced

• 1 large carrot, diced

• 4 bay leaves

• 4 cloves

• 1 stick of cinnamon

• 1 star anise

• Place the coriander seeds, bay leaves, cloves, cinnamon stick and star anise in a cheesecloth.

• In a saucepan, brown the carrots, onions, celery, garlic and pumpkin in olive oil until they’re nicely coloured. Add the beer, beef stock, tomatoes and the cheesecloth containing the herbs. Cook for about 25 minutes then add the beef and continue cooking for another 25 minutes. Adjust the seasoning with salt and pepper to taste.

• Garnish with fresh coriander or celery leaves.


Alternative: This recipe can also be made with braised pork or cubed lamb.
