Ingredients

Waffles

  • 1 ¾ cups all-purpose flour
  • 60 ml L’infiltrée IPA beer
  • ¼ cup cornstarch
  • 2 tsp baking powder
  • ½ tsp salt
  • 2 egg yolks
  • 3 tbsp maple syrup
  • 3 tbsp melted butter
  • 225 ml milk
  • 2 egg whites, beaten to stiff peaks
  • 125 g strong cheese, grated

  • Ham and bacon
  • Eggs
  • Maple syrup

Steps

  1. In a large bowl, sift the flour and cornstarch, then add the baking powder and salt.
  2. In another bowl, whisk the egg yolks with the maple syrup, melted butter, milk, and beer.
  3. Mix the dry ingredients into the wet ingredients until smooth.
  4. Gently fold the beaten egg whites into the waffle batter.
  5. Add about ¾ of the grated cheese to the batter.
  6. Preheat the waffle iron to medium-high.
  7. Sprinkle a small amount of grated cheese directly onto the hot waffle iron, then pour in about ¾ cup of batter.
  8. Cook about 5 minutes or until golden brown.
  9. Serve with syrup or assemble into a sandwich with toppings of your choice.
