The maple, bacon, and Maudite beer donuts are a perfect celebration of sugar season: a soft, tender dough enhanced by the beer’s malty notes, a maple and reduced Maudite beer glaze, and a generous crunch of crispy bacon.

Ingredients

Donuts

  • ¼ cup Maudite beer
  • 3 cups all-purpose flour
  • 1 ½ tsp salt
  • 2 tsp baking powder
  • 1 tsp baking soda
  • ⅓ cup brown sugar
  • 2 tbsp melted butter, cooled
  • 2 tbsp maple syrup
  • 1 egg
  • ¾ cup milk

Icing

  • 1 cup powdered sugar
  • 3 tbsp maple syrup
  • 3 tbsp reduced Maudite beer
  • (reduction: heat ½ cup of beer over medium heat for 5–7 minutes)
  • A pinch of salt

Topping

  • 6 slices cooked bacon, chopped

Steps

  1. In a mixing bowl, combine the flour, salt, and baking powder.
  2. In a separate bowl, whisk the brown sugar with the egg, melted butter, maple syrup, and Maudite beer until smooth.
  3. Gradually incorporate the dry ingredients into the wet ingredients in three additions, mixing with a wooden spoon.
  4. Form a dough ball, cover, and let rest for 15–20 minutes.
  5. Preheat fryer oil to 350°F (175°C).
  6. On a floured surface, roll out the dough to about 1.5 cm (½ inch) thick.
  7. Cut out donuts with a cutter.
  8. Fry 1–2 minutes per side, then let cool on a rack or paper towels.
  9. Mix all icing ingredients together.
  10. Once donuts are cooled, glaze and sprinkle with bacon pieces.
