Ingredients

  • 1 cup Maudite Unibroue beer
  • 150 g. maple-flavored Oka cheese, grated
  • 150 g. Louis Cyr cheese (Fromagerie Bergeron), grated
  • 150 g. Jarlsberg cheese (similar to Emmental cheese), grated
  • 1 tablespoon cornstarch
  • 1 garlic clove, cut in half
  • Juice of ½ lemon
  • Freshly ground black pepper, to taste

Accompaniments

  • Baguette bread pieces, cut into chunks, to taste
  • Blanched asparagus, to taste
  • Blanched Brussels sprouts, to taste
  • Slices of ham, to taste
  • Prosciutto, to taste




Steps


  1. In a large bowl, mix the grated cheeses with the cornstarch and set aside.
  2. Rub the inside of a small saucepan with the garlic clove.
  3. Over medium heat, heat the beer for 2 minutes.
  4. Incorporate the cheeses while stirring.
  5. Simmer for 5 minutes over low heat, stirring occasionally.
  6. Add the lemon juice, season with pepper, and mix.
