Jerk and Raftman beer chicken

• 8 chicken drumsticks

• 180 ml of Raftman beer

• 125 ml of onions, cubed

• 10 ml of fresh grated ginger

• A pinch of nutmeg

• A pinch of cinnamon

• 1 tsp. of Jamaican chilli

• ½ jalapeño, deseeded and finely chopped

• The zest and juice of 1 orange

• The zest and juice of 1 lime

• 1 tbsp. of brown sugar

• 2 tbsp. of butter

• Salt and pepper to taste

Preparation

• Preheat the oven to 400°F (200°C).

• Place all the ingredients in a dripping pan*

• Cook for about one hour.

• Serve with rice.

*Dripping pan: A rectangular, slightly hollowed enamelled tray, adapted to the dimensions of the oven. It is placed under the rack to collect cooking juices from roasting.
