Fraser’s Pub BBQ Sauce (La Terrible)

Ingredients:

Servings: Makes 2 gal.

 

  • 3 red onion
  • 3 bay leaves
  • 2 tsp salt
  • 2 tsp pepper 
  • 2 #10 can ketchup
  • 7 oz. can chipotle peppers in adobe sauce
  • 3 chili pepper
  • 3 ancho chili pepper
  • 2 cups Apple cider vinegar
  • 24 oz. pineapple juice
  • 16 oz. honey
  • 1.5 cups UNIBROURE TERRIBLE
  • 1/3 cup tabasco
  • 1 cup lemon juice
  • 1 cup Lime juice
  • 1 slice lemon
  • 1 slice orange
  • 2 lb. brown sugar

Preparation

Chop red onions fine and sweat till pink, add bay leave, Salt, pepper, ketchup, peppers, all liquids, juices, lemon and orange slice, Cook for 2 hours.

While still hot add brown sugar and stir.

Cool to 70° in the first 2 hours and to 41° in the next 4 hrs.

Keep refrigerated for 24 hrs., strain in containers.
