Marinade for shrimp and fish

• 125 ml of Maudite or Blanche de Chambly (to taste, according to desired intensity)

• 350 ml French shallots, minced

• 125 ml fresh coriander, chopped

• 125 ml Thai peppers, chopped

• 60 ml garlic, minced

• 250 ml extra virgin olive oil

• 180 ml fresh lime juice

• 30 ml tequila

• 15 ml ground black pepper

• 5 ml anise seeds

• 12 to 15 peeled raw shrimp

Preparation

• Combine all the ingredients in a bowl and mix.

• Add shrimp to the mixture and marinate in the refrigerator for about 2 hours prior to grilling on the BBQ.
