Iced Savarin à la Quelque Chose
Ingredients
Savarin
  • 2 eggs yolks
  • 50 ml (1/4 cup) sugar
  • 15 ml (1 tbsp) 2% milk
  • 75 ml (1/3 cup) all-urpose flour
  • 10 ml (2 tsp) baking powder
  • 1 env. quick rising yeast
  • 2 eggs whites beaten

    Blanche de Chambly maple syrup

  • 180 ml (6 oz) Blanche de Chambly
  • 75 ml (1/3 cup) maple syrup
  • 75 ml (1/3 cup) orange juice

    Sauce à la Quelque Chose

  • 15 ml (1 tbsp) butter
  • 125 ml (1/2 cup) maple syrup
  • 125 ml (1/2 cup) orange juice
  • 398 ml (14 oz) Bing cherries, drained et reserve juice
  • 175 ml (3/4 cup) Quelque Chose
  • 15 ml (1 tbsp) cornstarch mixed with a little water

    Assembling

  • 500 ml (2 cups) vanilla ice cream
  • fresh mint leaves
  • Preparation

    Preheat oven 350 F (180 C). Mix yolks and sugar with an electric mixer. Add milk a little at time, then the flour, baking powder and the yeast.

    Add egg whites. Pour into buttered miniature muffin tin and bake for 12-15 minutes. Cool 5 minutes and unmold on a rack.

    Bring the beer and maple syrup, orange juice to a boil, and reduce by half. Brush this syrup on the savarin. Cover and refrigerate until ready to use.

    Melt butter in a casserole, add maple syrup, orange juice, cherry juice and beer. Simmer by half (skim if necessary) thicken the sauce with the cornstarch. Add cherries.

    Cut each savarin in half. Cover half with the ice cream and other half with Quelque Chose sauce. Decorate with fresh mint. Serve 2 savarin per person.
