Beer and Cheese Soup

Beer: Blonde de Chambly


- 2 tbsp. butter

- 1 yellow onion, finely chopped

-1 green onion, finely chopped

- 1 tbsp. flour

- 1 tsp. mustard powder

- 1 tsp. paprika (or to taste)

- 1½ cups Blonde de Chambly

- 1½ cups of homemade chicken broth (if using bouillon powder, just use one packet or the soup will be too salty!)

-½ cup mild cheddar cheese

- ½ cup sharp cheddar cheese (or another type of sharp cheese)

- Milk or cream (optional)


In a saucepan, fry yellow and green onion in butter until caramelized. Add flour and mix well. Slowly add beer and chicken stock, stirring to allow soup to thicken. Simmer about ten minutes, then add the spices and cheese. If you like, add a bit of milk or cream right before serving.
