Buckwheat Crepes with Raftman Caramelized Apples

- 2 eggs
- 2 cups milk
- 1½ cup flour
- 1 tbsp. icing sugar
- Pinch of salt
- 2 tbsp. vegetable oil
- 1 tbsp. butter
- 5 apples, cored and cut into 8 pieces
- 1 cup maple syrup
- 1 cup brown sugar
- 12 oz. Raftman beer
- Mix eggs, milk, flour, icing sugar, and salt in a bowl. Heat oil in a nonstick skillet and cook 12 thin crepes. Let cool and set aside.
- Melt butter and sauté apples in a large pan. Mix in maple syrup and brown sugar. Caramelize. Add beer and reduce to desired consistency.
- Stack 3 crepes and top them with caramelized apple sauce.
