Quelque Chose Crepes

Ingredients
Crepe mix
- 2 eggs
- 2 cups milk
- 1½ cup flour
- 2 tbsp icing sugar and pinch of salt
- 2 tbsp. vegetable oil
Sauce
- 2 cups Quelque Chose beer
- 1 tbsp. butter
- 1/2 cup maple syrup
- 1/2 cup orange juice
- 14 oz. can of cherries, drained (save juice)
- 1 tbsp. cornstarch, mixed with a little water
Directions
Mix eggs, milk, flour, icing sugar, and salt in a bowl. Heat oil in a nonstick skillet and cook thin crepes. Let crepes cool and set them aside. Melt butter in a saucepan. Add maple syrup, orange juice, cherry juice, and beer. Let simmer on low heat for 4 to 5 minutes. Thicken sauce with cornstarch and mix in cherries. Preheat oven to 350°F. Fold crepes in four and put them on a buttered cookie sheet. Lightly reheat crepes in oven for 2 to 3 minutes and serve with sauce.
