Maudite-Style Lac Saint-Jean Meat Pie

- 2 pieces of rolled-out pastry dough (pie dough)

- 1¼ lb. mixed meats (deer, hare, rabbit, veal, pork, chicken, etc.)

- 3 tbsp. onion, chopped

- Salt, pepper, and herbs to taste

- 3 1/3 cups potato, peeled and cubed

- 1½ cup Maudite beer

- 3/4 cup beef broth 



Line an oven-proof stock pot (that has a cover) with pastry dough. Add meat mix, onion, and potato. Season. Moisten with beer and beef broth, and cover with the other layer of pastry dough. Bake at 375°F for 1 hour. Cover pot and continue baking at 250°F for 4 to 5 hours.
