Salmon Filets with La Fin du Monde Pearled Barley

Ingredients
- 2 tsp. butter
- 2 tbsp. French shallots, chopped
- 1 cup pearled barley
- 12 oz. La Fin du Monde beer
- 1 cup chicken broth
- 1 tbsp. fresh parsley, chopped
- Salt and pepper to taste
- 2 tbsp. butter
- 8 salmon fillets (2 oz. each)
- 1 tbsp. French shallots, chopped
- Salt and pepper to taste
- 1 cup La Fin du Monde beer
- 1 cup butter, melted
- 1 tsp. flour
- 1 tbsp. chives, chopped
- 1 tomato, seeded and diced
Directions
Melt butter in a saucepan and sweat shallots. Add barley, beer, chicken broth, and parsley. Season and simmer covered over low heat for around 45 minutes. Keep warm. Melt butter in a large pan and fry fillets 1 minute on each side. Season to taste. Remove from pan and keep warm. Pour beer and broth into the pan and reduce by half. Thicken slightly with a mixture of butter and flour. Serve salmon filets on a bed of barley, drizzled with sauce and garnished with chives and diced tomatoes.
