Wild Turkey Breast with Cranberries and Don de Dieu

Ingredients
- 1 (3 lb.) wild or grain-fed turkey breast
- 2 tbsp. butter
- Salt and pepper to taste
- ¼ cup shallots, chopped
- 1½ cup cranberries
- ¼ cup sugar
- 12 oz. Don de Dieu beer
- 1½ cup demi-glace (or commercial brown sauce mix)
- ½ cup orange juice
- 2 tbsp. vinegar
Directions
Preheat oven to 350°F. Place turkey breast in a buttered baking dish, garnish with a knob of butter, season, and cook 1 hour. Add shallots, cranberries, and sugar and continue cooking 15 minutes. Add beer, demi-glace, orange juice, and vinegar, and continue cooking for 20 to 30 minutes. Carve turkey breast into fine slices and serve on a bed of sauce.
