Layered Salmon Pie with Don de Dieu
Serves 6

Cook time: 4.5 hours
Ingredients
- 2 cups flour
- 2 tsp. baking soda
- ½ cup lard
- 1 cup Don de Dieu beer
- ¾ lb. salt pork, cubed
- 1 ½ lb. salmon, boned and uncooked or canned
- 2/3 cup onions, chopped
- 2 cups potatoes, sliced
- Herbs to taste
- Salt and pepper to taste
Directions
Dough
Sift dry ingredients together. Cut in lard until crumbly. Add water and work just enough to form dough.
Filling
In a 2-quart (8-cup) ovenproof pot or Dutch oven, arrange layers of salt pork, salmon, onions, potatoes, and herbs. Season and cover with rolled out dough. Make an incision in the dough. Pour beer though the incision, filling up the pastry shell. Cook covered at 200°F for 3.5 hours. Remove cover and return to oven for an additional hour or until crust turns golden.
Add beer during cooking time if necessary.
