Ham with Apples and Blanche de Chambly
Serves 8

Cooking time: 45 minutes
Ingredients
- 1 cup Blanche de Chambly
- 1/2 cup brown sugar
- 1 cup maple syrup
- 4 lb. precooked ham
- 1 tbsp. butter
- 1 cup onions, chopped
- 1/2 cup celery, chopped
- 1/2 cup carrots, chopped
- 8 red apples, whole
- 1 cup fat-skimmed, unsalted beef bouillon
- 1 cup Blanche de Chambly
- 1 tbsp. corn starch stirred into a bit of water
Directions
Preheat oven to 350°F.
In a bowl, combine beer, brown sugar, and maple syrup.
Place ham in a buttered roasting pan and baste with syrup sauce. Add onions, celery, and carrots.
Bake 30 to 40 minutes. Halfway through cooking time, place the apples in the roasting pan and baste apples and ham with lemon juice.
When done, remove ham and apples from roasting pan and place on a serving dish. Set aside.
Add bouillon and beer to cooking juices and simmer 5 minutes. Thicken with corn starch.
Spoon sauce over ham just before serving.
